There was a piece of software you ran on the SBS server that basically converted the SBS domain into a normal domain and removed all the role restrictions and limits, but mostly the "pack" is just licensing and the reason you have to call MS about it is that the SBS cals come with built in cals for exchange etc, but you have to license those all separately when you break out of the SBS domain.

So it can get real expensive licensing-wise to transition out of an SBS setup.
